Fruity Cheese Salad
What You’ll Need:
1 can of apricots (reserve juice)
1 can of crushed pineapple (reserve juice)
2 pkg. lemon or lime gelatin
2 C boiling water
1/2 C miniature marshmallows
1/2 C sugar
2 T butter or margarine
3 T flour
1 egg
1 C whip cream
1 C shredded Cheddar Cheese
Fool Proof Directions:
Place jello in a large mixing bowl. Add boiling water and dissolve.
Mix reserved fruit juice together. Add 1 C to gelatin and stir well.
Place in refrigerator until gelatin just begins to set up.
Remove and add apricots, pineapple and marshmallows. Place in an oblong glass dish, cover and refrigerate until firm.
In a saucepan over low heat mix together sugar, butter, flour and egg. Cook stirring constantly until sauce just begins to thicken. Remove from stove and allow to cool to room temperature.
Once cooled add whip cream and stir well to incorporate. Spread sauce over firm gelatin mixture. Sprinkle with cheddar cheese.
